Ingredients

3 cups cubed seedless watermelon, chilled
1/3 cup reduced-fat crumbled feta cheese
7 oz. arugula (about 4 cups loosely packed)
1/4 small small red onion, thinly sliced
2 Tbsp. balsamic vinegar
1 Tbsp. olive oil
1/4 tsp. salt
1/4 tsp. ground black pepper

Directions

  1. In a large bowl, toss together the watermelon, feta, arugula, and onion.
  2. In a medium bowl, whisk together the vinegar, olive oil, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to coat.
