Ingredients

Pork Chops
1 lb. boneless pork loin chops (4 pork chops)
1/4 tsp. ground black pepper
1/2 tsp. garlic powder
1 tsp. dried oregano
Peach Salsa
2 peaches, peeled, cored, and diced
1/2 green bell pepper, finely diced
1/3 cup red onion, finely diced
1 Tbsp. rice wine vinegar
1 tsp. olive oil
1 tsp. fresh cilantro, chopped
1 packet sugar substitute, such as stevia

Directions

  1. Prepare an indoor or outdoor grill. Season the pork chops with the black pepper, garlic powder, and oregano. Grill the pork chops over medium heat for 3 to 4 minutes per side, or until the internal temperature of the pork is 145° F.
  2. In a small bowl, mix together the salsa ingredients.
  3. Top each cooked pork chop with 1/4 cup of the peach salsa and serve.
