Ingredients

1 lb. fresh asparagus, trimmed and cut into 2-inch pieces
3 Tbsp. light, trans-fat-free margarine
3 Tbsp. sliced almonds
2 Tbsp. thinly sliced roasted red bell pepper, drained
1/4 tsp. black pepper

Directions

  1. Place the asparagus in a large skillet with enough water to cover, and bring to a boil. Reduce the heat and simmer uncovered for about 3 minutes, until the asparagus is crisp yet tender. Drain and set aside.
  2. In the same skillet over medium heat, melt the margarine. Add the almonds and sauté for 2 to 3 minutes, or until golden. Return the asparagus to the skillet and add the roasted red pepper and black pepper. Cook for 3 to 5 minutes, or until heated through.
