Ingredients

Citrus Dressing
2 Tbsp. olive oil
2 Tbsp. lemon juice
2 Tbsp. fresh orange juice
1/4 cup loosely packed fresh parsley, stems removed
1/4 tsp. salt
1 garlic clove
1 avocado, pitted, peeled, and diced; divided
1 large head Boston or Bibb lettuce, cut into 1-inch pieces
1 cup cherry or grape tomatoes, cut in half
1/2 cup dry quinoa, cooked according to package directions and cooled
1 cup frozen shelled edamame, cooked according to package directions
2 Tbsp. unsalted pepitas (pumpkin seeds

Directions

  1. In a blender or food processor, blend the olive oil, lemon juice, orange juice, parsley, salt, garlic, and 1/4 of the avocado until smooth. Set aside.
  2. In a large bowl, combine the lettuce, tomatoes, quinoa, edamame, 3/4 of the avocado, and pepitas. Pour the dressing over the salad, toss gently, and serve immediately. Or chill until ready to serve, then pour dressing over salad.
