Ingredients

2 cups prepared Mexican rice or brown rice, warmed
2 cups shredded chicken (from Chicken Tacos Verde recipe, link below), warmed
1 cup canned pinto beans, drained, rinsed, and warmed
4 cups mixed salad greens, shredded
1 cup shredded reduced-fat Monterey Jack cheese
2 cups diced tomatoes
1/2 cup pico de gallo
1/4 cup guacamole

Directions

  1. Into each of 4 serving bowls, add 1/2 cup rice, 1/2 cup chicken from Chicken Tacos Verde recipe, and 1/4 cup beans.
  2. Garnish each with equal amounts of shredded salad greens, cheese, tomatoes, and pico de gallo. Top each with 1 Tbsp guacamole. Serve immediately.
