Ingredients

4 tsp. olive oil
2 lb. sliced mushrooms
1/2 lb. low-fat turkey sausage, sliced into 1/2-inch-thick pieces
4 1/2 cups no-sugar-added, low-sodium pasta sauce
2 1/2 cups water
1/2 cup rinsed and drained low-sodium canned red kidney beans
1/4 tsp. freshly ground black pepper

Directions

  1. Heat the olive oil in a large saucepan over medium-high heat. Add the mushrooms and sausage and sauté for 5 minutes.
  2. Add the pasta sauce, water, and beans. Bring to a simmer over medium heat, cover, and simmer for 15 minutes. Add the pepper and serve.
