Ingredients

2 med. zucchini (yields 4 cups "zoodles")
1 Tbsp. extra-virgin olive oil
1 cup grape tomatoes
3 cloves garlic, finely minced
2 Tbsp. Parmigiano-Reggiano cheese (optional)

Directions

  1. Using a spiralizer or similar tool, cut the zucchini into noodles.
  2. Heat the olive oil in a large sauté pan. Add the grape tomatoes and garlic. Cook until the garlic is fragrant and just beginning to brown.
  3. Add the zucchini noodles and cook until they are heated through and the tomatoes are softened. If desired, sprinkle with Parmigiano-Reggiano cheese, and serve.
