Ingredients

2 | tsp. | fresh lime juice |
1 | Tbsp. | olive oil |
3 | Tbsp. | chopped cilantro |
1 | clove garlic, sliced | |

1 | tsp. | Worcestershire sauce |
1 | large | bell pepper, any color, cut into thin rings |
1 | large | onion, sliced into thin rings |
2 | large | tomatoes, peeled, cut into 6 wedges each |
1 | Tbsp. | chopped parsley (optional) |
Directions
- Combine the dressing ingredients and mix well. Pour the dressing over the vegetables and stir.
- Cover and refrigerate for 8 hours or overnight, stirring occasionally to blend the flavors. If desired, sprinkle with parsley and serve.
