Ingredients

Dressing
1/2 cup cider vinegar
2 tsp. fresh lime juice
1 Tbsp. olive oil
3 Tbsp. chopped cilantro
1 clove garlic, sliced
1 tsp. sugar
1/4 tsp. salt
1/2 tsp. black pepper
1 Tbsp. ketchup
1 tsp. Worcestershire sauce
1 large bell pepper, any color, cut into thin rings
1 large onion, sliced into thin rings
2 large tomatoes, peeled, cut into 6 wedges each
1Tbsp.chopped parsley (optional)

Directions

  1. Combine the dressing ingredients and mix well. Pour the dressing over the vegetables and stir.
  2. Cover and refrigerate for 8 hours or overnight, stirring occasionally to blend the flavors. If desired, sprinkle with parsley and serve.
