Nonstick cooking spray
1/4 cup diced onion
1 clove garlic, minced
2 1/2 tsp. flour
1 (6-oz) can fat-free evaporated milk
3/4 cup fat-free milk
1/4 tsp. salt
1/4 tsp. cayenne pepper
4 1/2 cups thinly sliced red potatoes, rinsed and drained

1/4 cup freshly grated Parmesan cheese

Directions

  1. Preheat the oven to 350° F.
