Ingredients

1/4 | cup | diced onion |
1 | clove garlic, minced | |
2 1/2 | tsp. | flour |
1 | (6-oz) can fat-free evaporated milk | |
3/4 | cup | fat-free milk |
1/4 | tsp. | salt |
1/4 | tsp. | cayenne pepper |
4 1/2 | cups | thinly sliced red potatoes, rinsed and drained |
1/2 | cup | shredded reduced-fat cheddar or Swiss cheese |
1/4 | cup | freshly grated Parmesan cheese |
Directions
- Preheat the oven to 350° F.
- Spray a nonstick saucepan with the cooking spray, add the onion and garlic, and sauté until tender. Add the flour and mix well. Add the evaporated milk, milk, salt, and cayenne pepper. Cook until slightly thickened, stirring constantly, about 2 minutes.
- Coat a 2-quart baking dish with cooking spray. Alternate layers of potato, cheeses, and sauce in the dish.
- Bake for 45 minutes, or until bubbly and golden brown. Let stand for 20 minutes before serving.
