|1||med.||cauliflower, cut into florets|
|1/2||cup||green beans, fresh (cut into 1-inch pieces), frozen, or canned (rinsed and drained)|
|1/2||cup||fat-free mayonnaise, sour cream, or plain yogurt|
|2||med.||tomatoes, diced and drained|
|1/4||cup||finely chopped red onion|
|1/4||cup||chopped red or green bell pepper|
|1||clove garlic, minced|
|1||tsp.||fresh lime juice|
- Cook the cauliflower and green beans (if fresh or frozen) in boiling water for 6 to 8 minutes. Drain.
- Meanwhile, combine the remaining ingredients, except the lettuce, and mix well. Toss the mixture with the lettuce and cooked cauliflower and green beans. Refrigerate for at least 1 hour before serving.
