Ingredients

1 med. cauliflower, cut into florets
1/2 cup green beans, fresh (cut into 1-inch pieces), frozen, or canned (rinsed and drained)
1/2 cup fat-free mayonnaise, sour cream, or plain yogurt
2 med. tomatoes, diced and drained
1/4 cup grated carrot
1/4 cup finely chopped red onion
1/4 cup chopped red or green bell pepper
1/8–1/4 tsp. chili powder
2 Tbsp. chopped cilantro
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp. black pepper
1 tsp. fresh lime juice
1 cup shredded lettuce

Directions

  1. Cook the cauliflower and green beans (if fresh or frozen) in boiling water for 6 to 8 minutes. Drain.
  2. Meanwhile, combine the remaining ingredients, except the lettuce, and mix well. Toss the mixture with the lettuce and cooked cauliflower and green beans. Refrigerate for at least 1 hour before serving.
