Ingredients

10 cups washed, ready-to-eat spinach
2 cups cooked brown rice (use quick-cook rice)
4 tsp. olive oil
1/4 tsp. salt
1/4 tsp. freshly ground black pepper

Directions

  1. Place the spinach in a large, microwave-safe bowl and microwave on high for 1 minute. Set aside.
  2. Cook the rice in the microwave according to package instructions. Measure 2 cups of rice and save any remaining rice for another dinner.
  3. Add the hot rice to the spinach and toss with the olive oil, salt, and pepper.
