Ingredients
10 | cups | washed, ready-to-eat spinach |
2 | cups | cooked brown rice (use quick-cook rice) |
4 | tsp. | olive oil |
1/4 | tsp. | salt |
1/4 | tsp. | freshly ground black pepper |
Directions
- Place the spinach in a large, microwave-safe bowl and microwave on high for 1 minute. Set aside.
- Cook the rice in the microwave according to package instructions. Measure 2 cups of rice and save any remaining rice for another dinner.
- Add the hot rice to the spinach and toss with the olive oil, salt, and pepper.
