|10||cups||washed, ready-to-eat spinach|
|2||cups||cooked brown rice (use quick-cook rice)|
|1/4||tsp.||freshly ground black pepper|
- Place the spinach in a large, microwave-safe bowl and microwave on high for 1 minute. Set aside.
- Cook the rice in the microwave according to package instructions. Measure 2 cups of rice and save any remaining rice for another dinner.
- Add the hot rice to the spinach and toss with the olive oil, salt, and pepper.
