Ingredients

Olive oil spray
1/2 med. sweet onion (about 5 oz, or 1 cup), cut into 1/4-inch squares
1/8 tsp. reduced-sodium salt substitute
Freshly ground black pepper, to taste
2 Tbsp. balsamic vinegar
1 tsp. finely crumbled dried rosemary leaves
1/8 tsp. sea salt
8 oz. 96% lean ground beef
2 multigrain sandwich thins
2/3 cup loosely packed arugula leaves

Directions

  1. Preheat a grill to high.
  2. Mist a small nonstick stockpot with oil spray. Add the onions, salt substitute, and pepper and place on a stove over medium heat. Cover the pot and cook the onions for 8 to 12 minutes, stirring every minute or so, until they start to brown and are tender.
  3. Add the balsamic vinegar. Continue cooking the onions, uncovered, stirring occasionally for 1 to 3 minutes, until the onions are coated with the balsamic glaze and most of the liquid has cooked away. Set aside.
  4. Meanwhile, in a small bowl, mix the rosemary and salt into the beef with a fork until well combined. Shape the beef into 2 equal patties, about 4½ inches in diameter. Season the patties with pepper, to taste. Grill the patties on high for 2 to 3 minutes per side (for medium rare), or until desired doneness is reached.
  5. Add the sandwich thins to the grill (away from direct flame) and warm for 30 seconds to 1 minute, until very lightly toasted.
  6. Place one sandwich thin bottom on each of two serving plates. Divide the arugula evenly between the two thins. Top with the burger patties, onions, and bun tops. Enjoy immediately.
