Ingredients

1 lb. carrots, peeled and sliced into rounds
1 tsp. olive oil
2 cloves garlic, minced
1 tsp. minced ginger
1/2 tsp. nutmeg
1 Tbsp. lemon juice
1/4 tsp. salt
1 Tbsp. chopped parsley (optional)

Directions

  1. Steam the carrots in a microwave oven or on the stovetop, using a steamer insert over 1 to 2 inches of water in a pan over high heat, until tender yet still crisp.
  2. Place the oil, garlic, and ginger in a large nonstick sauté pan over medium heat and cook for 1 minute.
  3. Remove the pan from the heat and add the carrots, nutmeg, lemon juice, salt, and parsley, if desired. Transfer to a bowl or platter, and serve.
