Ingredients
1 | lb. | carrots, peeled and sliced into rounds |
1 | tsp. | olive oil |
2 | cloves garlic, minced | |
1 | tsp. | minced ginger |
1/2 | tsp. | nutmeg |
1 | Tbsp. | lemon juice |
1/4 | tsp. | salt |
1 | Tbsp. | chopped parsley (optional) |
Directions
- Steam the carrots in a microwave oven or on the stovetop, using a steamer insert over 1 to 2 inches of water in a pan over high heat, until tender yet still crisp.
- Place the oil, garlic, and ginger in a large nonstick sauté pan over medium heat and cook for 1 minute.
- Remove the pan from the heat and add the carrots, nutmeg, lemon juice, salt, and parsley, if desired. Transfer to a bowl or platter, and serve.
