Ingredients
Nonstick cooking spray | ||
4 | med. | medium sweet potatoes (about 1 1/2 lb total), washed and peeled |
1 | Tbsp. | olive oil |
1 | Tbsp. | ground cinnamon |
1 | Tbsp. | chili powder |
1/2 | tsp. | ground ginger |
Directions
- Preheat the oven to 425° F.
- Spray a baking sheet with the nonstick cooking spray.
- Cut the sweet potatoes into thick strips or wedges. Put them in a gallon-size plastic storage bag.
- Add the olive oil to the bag, seal it, and shake until the sweet potato pieces are coated. Place the pieces on the baking sheet in a single layer.
- Mix the spices in a small bowl, then sprinkle over the sweet potatoes.
- Bake for 45 minutes to an hour.
