Ingredients

Nonstick cooking spray
4 med. medium sweet potatoes (about 1 1/2 lb total), washed and peeled
1 Tbsp. olive oil
1 Tbsp. ground cinnamon
1 Tbsp. chili powder
1/2 tsp. ground ginger

Directions

  1. Preheat the oven to 425° F.
  2. Spray a baking sheet with the nonstick cooking spray.
  3. Cut the sweet potatoes into thick strips or wedges. Put them in a gallon-size plastic storage bag.
  4. Add the olive oil to the bag, seal it, and shake until the sweet potato pieces are coated. Place the pieces on the baking sheet in a single layer.
  5. Mix the spices in a small bowl, then sprinkle over the sweet potatoes.
  6. Bake for 45 minutes to an hour.
