Ingredients

1 | (20-oz) can pineapple chunks in their own juice, drained | |
1/4 | cup | flaked coconut (unsweetened if available) |
1/4 | cup | thinly sliced fresh mint |
1 | Tbsp. | fresh lime juice |
1 | Tbsp. | grated fresh ginger |
Directions
Peel the oranges and section them, working over a bowl to catch any juice. Add the orange sections and juice to a serving bowl with the remaining ingredients. Mix gently. Cover and refrigerate for 30 minutes before serving.
