Ingredients
1 | tsp. | extra-virgin olive oil |
1/2 | tsp. | minced garlic (about 1 clove) |
1 | lb. | large peeled and deveined shrimp, fresh if possible |
2 | Tbsp. | fresh lime juice, or more to taste |
1/4 | cup | fresh cilantro, chopped, or more to taste |
1/4 | tsp. | salt |
1/8 | tsp. | black pepper |
Directions
- Heat the oil in a large, heavy skillet over medium-high heat. Add the garlic and cook for 30 seconds, or until it is fragrant. Add the shrimp and cook, turning once, about 2 to 3 minutes per side, until the shrimp are pink and cooked through.
- Transfer the shrimp to a bowl, and combine with the lime juice, cilantro, salt, and pepper. Serve immediately or refrigerate for up to 2 days and serve cold.
