Ingredients
2 | tsp. | olive oil |
1 | large | onion, diced |
3 | garlic cloves, minced | |
1 1/2 | tsp. | smoked paprika |
1/2 | cup | dry white wine |
1 | (14.5-oz) can fire-roasted chopped tomatoes | |
1 | (15-oz) can cannellini beans, drained and rinsed | |
10 | oz. | baby spinach leaves, stems removed |
1 | Tbsp. | balsamic vinegar |
1/4 | tsp. | freshly ground black pepper |
Directions
- Heat the oil in a large saucepan over medium heat. Add the onion and sauté for 5 to 6 minutes. Add the garlic and smoked paprika and sauté for 1 minute.
- Add the white wine and cook for 2 minutes. Add the tomatoes and cook for 5 to 6 minutes. Add the beans and cook for 5 minutes. Add the spinach and cook until it is wilted. Stir in the balsamic vinegar and pepper and serve.
