Ingredients
3 | cups | finely diced green cabbage (about half a medium head) |
3 | plum tomatoes, seeded and finely chopped (about 1 cup) | |
1/2 | cup | finely minced fresh cilantro |
1 | jalapeƱo pepper, seeded and finely minced | |
2 | scallions, finely minced | |
2 | cloves garlic, finely minced | |
Juice of 2 large limes | ||

Directions
In a medium bowl, combine all of the ingredients; set aside to marinate for 15 minutes. The cabbage will soften as it marinates. If desired, serve with baked tortilla chips or jicama strips.
