Ingredients

3 cups finely diced green cabbage (about half a medium head)
3 plum tomatoes, seeded and finely chopped (about 1 cup)
1/2 cup finely minced fresh cilantro
1 jalapeƱo pepper, seeded and finely minced
2 scallions, finely minced
2 cloves garlic, finely minced
Juice of 2 large limes
1/4 tsp. sea salt

Directions

In a medium bowl, combine all of the ingredients; set aside to marinate for 15 minutes. The cabbage will soften as it marinates. If desired, serve with baked tortilla chips or jicama strips.
