Ingredients
2 | large | turnips, peeled, ends trimmed, cut into chunks |
1 | tsp. | kosher salt |
1 | tsp. | sugar |
Water to cover | ||
1/4 | cup | olive oil |
1/4 | cup | minced fresh chives |
Directions
- In a large saucepan, add the turnips, salt, sugar, and enough water to cover the turnips. (The salt and sugar are added to mellow the flavor of the turnips.)
- Cover the pan and bring to boiling. Cook for 20 minutes, until the turnips are tender. Drain well.
- Add the turnips to a mixing bowl and beat with electric beaters until smooth, drizzling in the olive oil while beating. Fold in the chives and serve.
