Ingredients
2 | garlic cloves, peeled and crushed with a knife | |
3 | lbs. | mixed cherry, plum, and vine-ripened tomatoes, diced into 3/4-inch pieces |
1/2 | cup | fresh basil, chopped |
3 | Tbsp. | olive oil |
1 | Tbsp. | balsamic vinegar |
1 | Tbsp. | red wine vinegar |
1/2 | tsp. | sea salt |
1/4 | tsp. | freshly ground black pepper |
Directions
- Rub a large mixing bowl with the garlic and then discard the garlic. Add the tomatoes, and with your hands lightly crush them to release their juices. Add the basil, oil, vinegars, salt, and pepper. Cover and let stand for 1/2 hour at room temperature.
- If desired, serve over a portion of warm or cold pasta or over grilled fish, chicken, or lean beef.
