Ingredients

Aluminum foil
1 lb. fresh green beans or haricots verts (slender French green beans)
1 1/2 tsp. olive oil
1 tsp. dried thyme leaves
1/2 tsp. freshly ground black pepper
2 thin slices prosciutto (1 oz each), cut in half lengthwise (to yield four slices)
1 Tbsp. grated fresh Parmesan cheese

Directions

  1. Preheat the oven to 400 F. Line a baking sheet with foil or parchment paper. Bring a 6-quart pot of water to a rapid boil. Meanwhile, trim the fibrous end of the green beans, leaving the tapered end intact.
  2. Add the green beans to the boiling water. Turn off the heat and let the green beans stand in the water for 2 minutes. Drain and rinse in cool water. Drain again and blot the green beans dry with paper towels.
  3. Divide the green beans into four bundles on the prepared baking sheet. Sprinkle each bundle with some of the olive oil, thyme, and black pepper. Wrap a slice of prosciutto around each bundle, seam side down. Sprinkle the top of each bundle with some of the Parmesan cheese.
  4. Bake the bundles for 2 to 3 minutes, until the cheese melts and the prosciutto is warm.
