- Preparation Time: 20 minutes

Ingredients
Aluminum foil | ||
1 | lb. | fresh green beans or haricots verts (slender French green beans) |
1 1/2 | tsp. | olive oil |
1 | tsp. | dried thyme leaves |
1/2 | tsp. | freshly ground black pepper |
2 | thin slices prosciutto (1 oz each), cut in half lengthwise (to yield four slices) | |
1 | Tbsp. | grated fresh Parmesan cheese |
Directions
- Preheat the oven to 400 F. Line a baking sheet with foil or parchment paper. Bring a 6-quart pot of water to a rapid boil. Meanwhile, trim the fibrous end of the green beans, leaving the tapered end intact.
- Add the green beans to the boiling water. Turn off the heat and let the green beans stand in the water for 2 minutes. Drain and rinse in cool water. Drain again and blot the green beans dry with paper towels.
- Divide the green beans into four bundles on the prepared baking sheet. Sprinkle each bundle with some of the olive oil, thyme, and black pepper. Wrap a slice of prosciutto around each bundle, seam side down. Sprinkle the top of each bundle with some of the Parmesan cheese.
- Bake the bundles for 2 to 3 minutes, until the cheese melts and the prosciutto is warm.
