2 Tbsp. olive oil
1/2 cup shallots, finely chopped
1/4 cup fresh orange juice
1/8 lb. kale, tough stems removed and leaves roughly chopped
freshly grated zest of 1/4 orange
1/2 large navel orange, cut into wedges, for garnish


In a large pan, heat the olive oil over medium heat. Sauté the shallots until soft (about 1 to 2 minutes); then add the orange juice. Stir ingredients to combine and start adding kale in batches (as you start stirring, it will begin reducing drastically). Once the kale is cooked to desired doneness, add the orange zest. Serve immediately, garnished with the fresh orange wedges.
