Ingredients

3 lbs. yukon gold potatoes, peeled and cut into 1-inch cubes
6 cloves garlic, peeled
1 tsp. fine sea salt
4 cups chicken stock
freshly ground pepper, to taste

Directions

  1. Place potatoes, garlic, salt, and pepper in heavy saucepan. Add stock and additional water to cover. Boil until potatoes are fork tender. Drain liquid from potatoes into a bowl and reserve to add back to potatoes.
  2. Place potatoes in mixer bowl. Mix until smooth then add enough of the hot cooking liquid to achieve desired consistency.

Cook's tips:

  • You have saved all the vitamins and minerals by using the cooking liquid! Also, by using the cooking water you will retain the potato starch, which will add richness to the dish.
  • You can also use vegetable stock in this dish.
  • Leftover cooking liquid can be used in sauces or soups.
  • Potatoes are also good when used as duchesse potatoes, piped thru a pastry bag and put on top of a potpie.
