2 cups seedless watermelon cubes
1 tsp. crumbled queso fresco
1 tsp. finely chopped cilantro
1 tsp. finely chopped mint
1 tsp. fresh lime juice
1/8 tsp. chili powder


Into a bowl add all ingredients and toss gently. Place in the refrigerator for 5 minutes to chill before serving. This allows the flavors of the watermelon to marry with the herbs, lime, and chili powder.
