    Chicken Lettuce Wraps

    6 large lettuce leaves, Boston or Bibb lettuce work well
    4 oz. Basic Grilled Chicken, finely chopped
    6 tsp. Asian peanut sauce
    6 tsp. julienned or matchstick carrots
    2 scallions, thinly sliced


    1. Place all the ingredients in separate bowls.
    2. Begin by laying a piece of the lettuce on a plate. Top the lettuce with the chicken, peanut sauce, carrots, and scallions. Roll up the lettuce leaf to enclose the filling.
