Glaze | ||
1/2 | cup | no-sugar-added apricot preserves |
1 | Tbsp. | Dijon mustard |
1 | Tbsp. | balsamic vinegar |
1 | tsp. | fresh peeled, grated ginger |
Directions
- Preheat the oven to 375 degrees. Line a baking sheet with parchment paper, or coat a roasting rack with cooking spray and place it inside a roasting pan.
- In a small bowl, mix the glaze ingredients. Brush 1/3 of the mixture over the pork loin roast and place the roast on the baking sheet or roasting rack.
- Roast the pork for 20 minutes. Brush another third of the sauce over the pork and continue to roast about 20 minutes, until the pork registers 165 degrees on a meat thermometer. Remove the roast from the oven and let it stand for 10 minutes for the juices to settle and to make carving easier. Serve slices with the remaining apricot glaze mixture on the side.
