Ingredients

2 whole boneless, skinless chicken breasts (tenderloins removed and saved for another use), halved (1 to 1 1/4 pounds)
2 tsp. olive oil
1 Tbsp. coarsely cracked coriander seeds
1 Tbsp. very finely minced (almost to a paste) garlic
2 tsp. coarsely cracked black peppercorns
1/2 tsp. kosher salt
Nonstick cooking spray

Directions

  1. If necessary, pound the chicken breasts so all pieces are of an even thickness, about 1/3 to 1/2 inch thick. Brush each chicken breast with olive oil. Mix the remaining ingredients (except cooking spray) and rub over the chicken. Let the chicken stand for 15 minutes.
  2. If you use a grill pan, coat it with vegetable oil cooking spray. If you use an outdoor grill, spray the cold grill rack with cooking spray and set the rack 4 to 5 inches from the heat source.
  3. Heat the grill to medium high. Add the chicken breasts and grill very quickly, about 4 to 5 minutes on each side, until cooked through.
