1 oz. thickly sliced bacon
1/2 cup diced onions
2 lbs. fresh collard greens, washed, stem and central rib removed, coarsely chopped
1 cup fat-free, reduced-sodium chicken broth
2 Tbsp. apple cider vinegar
1 tsp. sugar
1/4 tsp. crushed red chili flakes
1/4 tsp. freshly ground black pepper


  1. In a large pot or Dutch oven, cook the bacon over medium heat for 8 to 10 minutes or until crisp. Remove the bacon from the pot; set aside.
  2. Pour off all but 1 Tbsp. of the bacon drippings. Add the onion and sauté for 5 to 7 minutes. Add the collard greens, a little at a time, and sauté until the collards are bright green and slightly tender.
  3. Add the broth, vinegar, sugar, and chili flakes. Bring to boiling. Lower the heat, cover, and simmer for 40 minutes, until collards are tender. Remove the collards from the pot and place them in a serving bowl. Crumble the bacon over the collards and season with the pepper.
