Parchment paper or nonstick aluminum foil
2 lbs. washed fingerling potatoes, halved lengthwise, or very small round white or red potatoes, whole
1 Tbsp. minced fresh thyme
1 Tbsp. minced fresh oregano
1 Tbsp. minced fresh chives
1 Tbsp. minced fresh parsley
1 Tbsp. finely minced garlic
2 1/2 Tbsp. olive oil
1/2 tsp. sea salt
1/4 tsp. freshly ground black pepper


  1. Preheat the oven to 425 degrees. Line a rimmed baking sheet with parchment paper or nonstick aluminum foil.
  2. Add the potatoes to a large bowl. Add the remaining ingredients and mix well to coat the potatoes.
  3. Spread the potatoes in a single layer on the prepared baking sheet. Roast the potatoes for 30 to 35 minutes, tossing them occasionally while roasting, until tender.
