Avocados Help You Absorb Vitamins

Eating avocados can help your body better absorb vitamin A, which supports healthy skin, immune function, and vision. Two different 12-person studies investigated the effect of eating a whole fresh avocado together with foods containing carotenes, substances that give orange and yellow plants their color and that the body turns into vitamin A. Eating an avocado, which is rich in healthful fat, along with sauce made from orange tomatoes more than doubled the absorption of the carotene and more than quadrupled the conversion of the carotene to active vitamin A compared with eating just the tomato sauce. The effect of eating an avocado with raw carrots was even greater, upping carotene absorption by five to six times and increasing the amount of active vitamin A nearly 13-fold.
