Ingredients
12 | oz. | silken lite tofu |
10 | oz. | frozen green peas, thawed and patted dry |
1 | Tbsp. | sesame tahini |
1 | Tbsp. | olive oil |
1 | Tbsp. | lemon juice |
1 | Tbsp. | fresh grated Parmesan cheese |
1/2 | cup | minced fresh mint |
1 | scallion, finely minced | |
1/4 | tsp. | sea salt |
1/4 | tsp. | freshly ground black pepper |
Directions
- Add the tofu, peas, tahini, olive oil, lemon juice, and Parmesan cheese to a food processor or blender. Blend until smooth but thick. Add the mint, scallion, salt, and black pepper and blend again until smooth. Serve, if desired, with assorted raw vegetables, whole grain toasted pita bread, or whole grain crackers.
