1 large sweet onion, such as Vidalia, minced
2 lbs. plum tomatoes, seeded and chopped
1 large jalapeƱo pepper, minced
3/4 cup minced fresh cilantro
2 Tbsp. fresh lime juice
2 tsp. red wine vinegar
1/2 tsp. sea salt
1/4 tsp. freshly ground black pepper


In a large bowl, combine all the ingredients. Serve immediately. Refrigerate unused portion in a container with a lid; use within 3 days.
