Ingredients

1 small red bell pepper, finely chopped
1 small green bell pepper, finely chopped
1 small red onion, finely diced
2 garlic cloves, finely minced
1/2 cup water
1/4 cup fresh lemon juice
1/4 cup red wine vinegar
1/4 cup packed light brown sugar
1 tsp. ground ginger
1 tsp. salt
1/4 tsp. freshly ground black pepper

Directions

Combine all the ingredients in a saucepan and bring to boiling over medium-high heat, uncovered. Lower the heat and simmer for 20 minutes. Spoon into a container with a lid and refrigerate; use within 3 days.
