4 small cucumbers (about 6 oz. each), peeled, seeded, and grated
1 1/2 cups plain nonfat Greek yogurt
2 tsp. lemon zest
2 Tbsp. fresh lemon juice
1/2 cup chopped fresh mint
1/2 cup plus 2 Tbsp. chopped fresh dill, divided
1 Tbsp. olive oil
1/4 tsp. ground white pepper


Add all the ingredients except the 2 Tbsp. of dill to a food processor or blender; puree until smooth. Pour the soup into a container and refrigerate 3 to 4 hours to meld the flavors. If desired, garnish the soup with the 2 Tbsp. of chopped dill.
