Directions
Set the lettuce leaf on a flat work surface. Layer the carrots, beets, red pepper, and basil on one end of the leaf. In a prep bowl, combine the ingredients for the dressing. Drizzle the dressing on top of the vegetables. Carefully roll up the leaf. Wrap the lower end of the leaf with a napkin, if desired, for easy handling.
