Ingredients

1 | tsp. | ground cumin |
1/4 | tsp. | kosher salt |
1/8 | tsp. | freshly ground black pepper |
1 | Tbsp. | minced fresh cilantro |
Directions
- Coat a grill rack from an outdoor gas grill with cooking spray and set it 6 inches from the heat source. Preheat the grill to medium.
- Bring a 3-quart saucepan of water to boiling. Add the carrot halves and boil for 4 minutes. Drain well and pat dry.
- Drizzle the carrots with olive oil to coat. Sprinkle with cumin, salt, and black pepper.
- Add the carrot halves to the grill rack. Cover and grill for about 6 to 7 minutes. Turn the halves over and grill covered another 6 to 7 minutes, or until the carrots are slightly charred and soft.
- Transfer the carrots to a platter and sprinkle with cilantro.
