Ingredients

3 med. beets, greens removed,*
peeled and sliced into 1/2-inch-thick slices
1 Tbsp. olive oil, divided
1/4 tsp. kosher salt, divided
1/4 tsp. freshly ground black pepper, divided
1/4 cup balsamic glaze**
Tips: *Save the beet greens for later or sauté and serve with the grilled beets, as shown. Beet greens are rich in vitamins A, C, and K. **Balsamic glaze often can be found where balsamic vinegars are sold. It is a thickened balsamic vinegar that pours like maple syrup. If glaze is unavailable, pour 1/2 cup of balsamic vinegar into a small saucepan. Bring it to a light boil over medium heat until the vinegar is reduced to half its volume.

Directions

  1. Coat an outdoor gas grill rack with cooking spray and set 6 inches from the heat source. Preheat the grill to medium.
  2. Add the beet slices to the rack. Brush them with olive oil, and sprinkle them with salt and black pepper. Cover the grill and cook for 8 to 10 minutes. Turn the beets and brush with the remaining olive oil, salt, and black pepper. Cook another 8 to 10 minutes.
  3. Place the beets in a serving dish, over cooked beet greens or fresh salad greens if desired, and drizzle with the balsamic glaze.
