Ingredients

1/4 | cup | balsamic glaze** |
Tips: *Save the beet greens for later or sauté and serve with the grilled beets, as shown. Beet greens are rich in vitamins A, C, and K. **Balsamic glaze often can be found where balsamic vinegars are sold. It is a thickened balsamic vinegar that pours like maple syrup. If glaze is unavailable, pour 1/2 cup of balsamic vinegar into a small saucepan. Bring it to a light boil over medium heat until the vinegar is reduced to half its volume. |
Directions
- Coat an outdoor gas grill rack with cooking spray and set 6 inches from the heat source. Preheat the grill to medium.
- Add the beet slices to the rack. Brush them with olive oil, and sprinkle them with salt and black pepper. Cover the grill and cook for 8 to 10 minutes. Turn the beets and brush with the remaining olive oil, salt, and black pepper. Cook another 8 to 10 minutes.
- Place the beets in a serving dish, over cooked beet greens or fresh salad greens if desired, and drizzle with the balsamic glaze.
