Ingredients

1 large cucumber, peeled and thinly sliced
1/2 large red onion, thinly sliced
Dressing
3 Tbsp. plain nonfat yogurt
2 Tbsp. balsamic or red wine vinegar
1 Tbsp. low-fat mayonnaise
1 tsp. olive oil
1/2 tsp. dried thyme
pinch sugar
dash hot sauce

Directions

  1. In a serving bowl, combine the cucumber and red onion.
  2. Whisk together the dressing ingredients and add to the cucumber mixture. Gently toss and serve. If desired, garnish with fresh thyme.
