2 tsp. olive oil
1 large shallot, thinly sliced
8 oz. trimmed green beans
1/4 cup fat-free, lower-sodium
chicken broth
1/2 cup halved grape tomatoes
1/4 tsp. kosher salt
1/4 tsp. freshly ground black pepper
Juice of 1/2 lemon
5 large basil leaves, thinly sliced


  1. In a large skillet, heat the oil over medium heat. Add the shallots and sauté for 3 minutes.
  2. Add the green beans. Use tongs to turn them and coat with the shallots. Add the broth, and cover and steam for 4 minutes, until the green beans turn bright green but are still crisp. Add the grape tomatoes, cover, and steam for 1 minute. Uncover and continue to cook until the grape tomatoes are just beginning to soften, about 2 minutes. Add the salt and black pepper.
  3. Stir in the lemon juice and basil, and serve.
