Ingredients
2 | tsp. | olive oil |
1 | large | shallot, thinly sliced |
8 | oz. | trimmed green beans |
1/4 | cup | fat-free, lower-sodium |
chicken broth | ||
1/2 | cup | halved grape tomatoes |
1/4 | tsp. | kosher salt |
1/4 | tsp. | freshly ground black pepper |
Juice of 1/2 lemon | ||
5 | large | basil leaves, thinly sliced |
Directions
- In a large skillet, heat the oil over medium heat. Add the shallots and sauté for 3 minutes.
- Add the green beans. Use tongs to turn them and coat with the shallots. Add the broth, and cover and steam for 4 minutes, until the green beans turn bright green but are still crisp. Add the grape tomatoes, cover, and steam for 1 minute. Uncover and continue to cook until the grape tomatoes are just beginning to soften, about 2 minutes. Add the salt and black pepper.
- Stir in the lemon juice and basil, and serve.
