Vegetable-Tuna Mixture
1/4 head-large red cabbage, shredded (about 1 1/2 cups)
1 med. zucchini, unpeeled, shredded (about 1 cup)
1 large carrot, peeled and shredded (about 3/4 cup)
2 oz. water-packed white albacore tuna, drained and flaked
3 Tbsp. olive oil
1 Tbsp. fresh lemon juice
2 tsp. red wine vinegar
1 Tbsp. finely minced onion
2 tsp. finely minced fresh mint
1tsp.dried oregano
salt and ground black pepper to taste (optional)
2(6 inch) whole wheat pita breads, cut in half


  1. In a large bowl, combine the cabbage, zucchini, and carrot. Fold in the tuna.
  2. In a small bowl, whisk together the dressing ingredients. Pour over the vegetable-tuna mixture and combine well.
  3. Fill pita bread halves with the vegetable-tuna mixture. Serve immediately.
