2 tsp. toasted (dark) sesame oil
8 oz. fresh shiitake mushrooms, cleaned, stemmed, and thinly sliced
1 large shallot, minced
1 large garlic clove, finely minced
2 tsp. peeled, grated fresh ginger
6 cups low-fat, reduced-sodium chicken broth
1 Tbsp. reduced-sodium soy sauce
3 cups thinly sliced bok choy, cleaned, any hard stems removed and discarded
1 Tbsp. rice vinegar
1/2 tsp. chili paste with garlic (optional)
2 scallions, sliced


  1. In a large skillet, heat the sesame oil over medium heat. Add the shiitake mushrooms, shallot, garlic, and ginger. Sauté for about 3 minutes until the mushrooms begin to brown.
  2. Add the chicken broth, soy sauce, and bok choy. Simmer on low heat for 3 to 4 minutes, until the bok choy is tender. Stir in the rice vinegar and, if desired, chili paste.
  3. Garnish each bowl of soup with sliced scallions and serve.
