2 tsp. vegetable oil, divided use
1 lb. fresh green beans, trimmed
2 tsp. peeled, grated fresh ginger
1 garlic clove, minced
1/2 tsp. sugar
10 canned water chestnuts, drained, cut into 1/4-inch-wide slices
1/4 cup low-fat, reduced-sodium chicken broth
1 tsp. lite soy sauce
1/4 tsp. ground white pepper
1/8 tsp. crushed red pepper flakes
1 tsp. cornstarch
1 Tbsp. cold water


  1. In a large wok or heavy skillet, heat 1 tsp. oil over medium-high heat. Add the green beans and stir-fry for 3 minutes. With tongs, remove the green beans from the wok; set aside.
  2. Add the remaining 1 tsp. oil to the wok. Add the ginger and garlic, and stir-fry for 30 seconds. Return the green beans to the wok, and mix in the sugar and water chestnuts. Stir-fry for 1 minute.
  3. Combine the broth, soy sauce, white pepper, and crushed red pepper flakes, and add to the green beans. Cover and steam for 2 minutes. In a small bowl, combine the cornstarch and cold water. Add to the skillet, and cook and stir until the sauce is thickened.
