Ingredients

2 Tbsp. fresh lemon juice
2 tsp. sugar substitute
4 cups shredded cabbage
2/3 med. red onion, diced
(about 1/2 cup)
4 Tbsp. diced mint leaves
4 Tbsp. chopped cilantro
2 Tbsp. Smart Balance Omega
oil (or canola oil)

Directions

In a large bowl, stir together the lemon juice and sugar substitute. Add all the other ingredients and toss well until combined. Serve immediately, or cover and chill in the refrigerator before serving.
