Ingredients

4 Tbsp. fresh lime juice
2 Tbsp. olive oil
1 Tbsp. finely minced fresh cilantro
1/4 tsp. ground cumin
1/4 tsp. ground coriander
1/8 tsp. cayenne pepper
4 (4-;5 oz. each) tilapia fillets
Salt and freshly ground black pepper, optional
1 cup Kiwi Pineapple Relish

Directions

Marinating time: 30 minutes to 2 hours
  1. In a large bowl, combine the lime juice, olive oil, cilantro, cumin, coriander, and cayenne pepper. Add the tilapia, turning to coat. Cover and chill the tilapia for 30 minutes to 2 hours in the refrigerator.
  2. Meanwhile, prepare the Kiwi Pineapple Relish. Cover and refrigerate until serving time.
  3. Remove the tilapia from the refrigerator, and allow it to come to room temperature for 15 minutes. Cover a broiler tray with foil, and coat it with cooking spray. Drain the marinade from the tilapia; if desired, season with salt and black pepper. Broil the tilapia about 6 inches from the heat source for 4 to 5 minutes per side or until the fish flakes easily with a fork.
  4. Serve the tilapia with chilled Kiwi Pineapple Relish.
