1/2 ripe medium papaya,
seeded and diced
3 large plum tomatoes,
seeded and diced
1/2 cup minced red onion
1/2 cup minced red bell pepper
2 Tbsp. minced fresh basil
1 Tbsp. minced scallion
1 Tbsp. red wine vinegar
1 tsp. sugar
Salt and freshly ground
black pepper, optional


In a bowl, combine the papaya, tomatoes, red onion, red bell pepper, basil, scallion, red wine vinegar, sugar, and, if desired, salt and black pepper. Cover and refrigerate; use within three days. Try the Papaya Topping as a free-food condiment for bruschetta, broiled seafood, grilled chicken, and fish tacos.
