Ingredients

2 cups shredded cooked rotisserie
chicken breast, skinned and boned
1/3 cup coarsely chopped water chestnuts
2 scallions, sliced (about 1/2 cup)
1/4 cup minced fresh mint
2 Tbsp. toasted sesame seeds
Dressing
2 Tbsp. rice vinegar
1/2 tsp. Dijon mustard
1/4 tsp. chili sauce with garlic
3 Tbsp. peanut oil
1/2 tsp. toasted sesame oil

4 large Bibb lettuce leaves
1 lime, cut into wedge

Directions

  1. In a bowl, combine the chicken, water chestnuts, scallions, mint, and sesame seeds.
  2. In a small bowl, whisk together the rice vinegar, mustard, and chili sauce. Slowly add the peanut and sesame oils in a thin stream, whisking until emulsified.
  3. Add the dressing to the chicken mixture and mix well. Divide the chicken mixture among the lettuce leaves. Garnish each lettuce cup with lime wedges. Serve the lettuce cups at room temperature.
