2 | Tbsp. | sliced mini sweet and/or jalapeƱo peppers |
1/4 | cup | hot or mild salsa |
1 | Tbsp. | 50% reduced-fat shredded sharp |
cheddar cheese, such as Cabot | ||
1/4 | tsp. | olive oil |
Directions
- Preheat the oven or toaster oven to 375°F. Place the tortillas on a baking sheet or toaster oven tray. Spread the tortillas with refried beans, lay on the pepper slices, top with salsa, sprinkle with cheese, and drizzle with olive oil.
- Bake for 10 minutes, or until the cheese is melted and the tortillas are crisp.
