2 Tbsp. olive oil
2 Tbsp. minced onion
2 Tbsp. minced garlic (about 4 large cloves)
1 cup dry white wine such as sauvignon blanc
2 lbs. fresh small littleneck clams (about 20 clams)
2 Tbsp. minced fresh parsley


  1. In a large pan with a lid, heat the oil with the onion and garlic over medium-low heat for about 3 to 5 minutes, stirring often. Avoid letting the garlic brown. Add the wine, raise the heat to high, and bring to a boil.
  2. Add the clams, cover the pot, and steam until the clams open, 6 to 8 minutes. Stir once during the cooking time. Once most of the clams have opened, the clams are done. Discard any unopened clams. Garnish with parsley.
