Ingredients

1 | (4 oz.) boneless pork loin chop | |
Kosher salt and freshly ground black pepper to taste | ||
1/3 | cup | low-fat, reduced-sodium chicken broth |
2 | tsp. | balsamic vinegar |
1 | tsp. | brown sugar |
1 | Tbsp. | dried cherries, halved |
1/2 | tsp. | cornstarch |
2 | tsp. | water |
Directions
- Heat the olive oil in a small skillet over medium-high heat. Season the pork chop on both sides with salt and pepper, and sear on both sides for about 3 to 5 minutes per side, until cooked through. Remove from the skillet.
- Combine the broth, vinegar, brown sugar, and dried cherries. Add to the pan, scraping up any browned bits. Simmer on medium-high heat for 1 minute.
- Combine the cornstarch and water. Add to the cherry mixture and cook until thickened, about 30 seconds. Add back the pork chop and any accumulated juices. Simmer on low heat for 1 minute, flipping once to coat.
