Ingredients

1 slice bacon
2 Tbsp. avocado oil (or extra virgin olive oil)
1/4 cup minced red onion
1/4 tsp. sea salt
1/8 tsp. fresh-ground black pepper
1/8 tsp. sugar
1 to 2 Tbsp. red wine vinegar
7 cups fresh spinach leaves, stemmed

Directions

  1. In a large skillet, cook the bacon until crisp. Remove from the skillet and crumble. Drain any grease in the skillet, and add the avocado oil, onion, salt, pepper, and sugar to the pan. Cook for 2 to 3 minutes. Swirl in the vinegar, and heat for 30 seconds.
  2. Add the spinach to a serving bowl, and add the warm dressing. Work very fast with salad tongs to distribute the dressing. Top with the crumbled bacon and serve immediately.
